    One of the main characteristics of CMC is that it can form a viscous gel when mixed with water. This makes it a valuable thickener in various applications, such as in food products such as ice cream, sauces, and salad dressings. CMC can also be used as a stabilizer for dairy beverages and frozen desserts, helping to prevent ingredient separation.
    In addition to its thickening and stabilizing properties, CMC is also a commonly used emulsifier. This means it can help mix typically mutually exclusive components such as oil and water together. This makes CMC an essential ingredient in products such as mayonnaise and margarine.

- pH stability: Stable in the pH range of 3~12, and precipitation may occur if the acid is too strong (pH < 3).
