Carboxymethyl cellulose is a white or slightly yellow powder, granular or fibrous solid, non-toxic, a macromolecular chemical substance, which dissolves easily in water, does not dissolve in organic solvents, and can absorb water and expand. When dissolved in water, it can form a transparent viscous gel, and the viscosity will decrease with the increase of temperature [4]. Due to its special properties, it has many special requirements during storage and transportation. The pH value of the water suspension is 6.5 - 8.5.

usage

Methyl cellulose is widely used in the construction industry, such as being used as a binder for cement, mortar, joint sealants, etc. It is also used as a film-forming agent and adhesive in the cosmetics, pharmaceutical, and food industries. It is also used as a sizing agent for textile printing and dyeing, a dispersant for synthetic resins, a coating film-forming agent and a thickener for paints. From pulp, alkali cellulose is prepared, and then it reacts with chloroform or dimethyl sulfate in a pressure vessel, and is finally refined with warm water.

(1) CMC has excellent stability.
In cold food products such as ice pops and ice cream, when CMC is used, it can control the formation of ice crystals, increase the expansion rate, maintain a uniform and consistent texture, resist melting, have a fine and smooth texture, and enhance the color whiteness. In dairy products, whether it is flavored milk, fruit milk, or yogurt, within the pH value and isoelectric point range (PH 4.6), it can react with proteins to form a complex structure complex, which is beneficial for the stability of the emulsion and the enhancement of the protein's resistance ability.
(2) CMC can be combined with other stabilizers and emulsifiers.
In food and beverage products, manufacturers usually use multiple stabilizers, such as xanthan gum, guar gum, carrageenan, and dextrin, as well as emulsifiers like monostearin glycerides and sucrose fatty acid esters, for combination. This enables complementary advantages and achieves synergistic effects, thereby reducing production costs.
(3) CMC exhibits pseudoplasticity
The viscosity of CMC varies reversibly at different temperatures. As the temperature rises, the solution viscosity decreases, and vice versa. When CMC is subjected to shear force, its viscosity decreases, and it becomes smaller as the shear force increases. These properties of CMC enable it to reduce equipment load and improve homogenization efficiency during stirring, homogenization, and pipeline transportation, which is incomparable to other stabilizers.
